Seth Peterson, permaculture chef, was trained in the Bay Area and Latin America and enjoys from-scratch cooking and traditional culinary technique, from pig butchery to cheese-making.

Todd Spanier for over twenty-five years is known by many as the "King of Mushrooms," he has recently gaining media attention with his new company California Truffle Orchards LLC. North Bay Biz magazines "Game Changers" annual issue acknowledged his discovery, on Thursday, February 16th 2017 in Santa Rosa, where more than a dozen “Black Gold®” Périgord truffles (Tuber melanosporum) with the assists of Umami Truffle Dogs LLC were found! They where growing under ground in an orchard of filbert and oak trees planted five years ago. "California is the first place in North America to produce commercial quantities of Black Winter Périgord truffles (Tuber melanosporum), so we are so pleased to be part of the team to discover them at Jackson Park Ranch in Bennett Valley." said Spanier. Spanier was an honored guest and spokesperson at Italy’s most prestigious international truffle cultivation forum "Tuber 2008" in Spoleto, his knowledge, expertise, and reputation are well known among leaders in the industry.
